Papdi Chat

For Papdi:

All purpose flour/Maida - 1/2 cup
Rava/semolina flour - 3 tsp
Salt - to taste
Water - required

Make a soft dough out the above mentioned ingredients, just finally add 1 tsp of oil at the last to kneed everything together. Close the kneeded doughed and keep it aside for 1/2 an hour.

After 1/2 an hour, make rotis of it, pierce the roti all over and diagonally cut them into pieces.

Then fry these pieces in medium flame and keep it aside.

For chat:

  • Potato - 1 boiled

  • White channa - 1/2 cup boiled with salt.

Green chutney

  • Mint leaves - 1/2 bunch

  • Corriander leaves - 1/2 bunch

  • Green chillies - 2

Roast and grind following ingredients:

  • Cumin seeds - 1/2 tsp

  • Corriander seeds - 1 tsp

  • Tamarind - 1/4 tsp

Roast the above ingredients and keep it aside.

Mix these roasted ingredients with corriander leaves, mint leaves and green chilles and ground it to a fine paste.
Sweet chutney:

  • Tamarind paste - 3 tsp

  • Jaggery - 1/2 tsp

  • Chilli powder - 1/4 tsp

  • Cumin powder - 1/4 tsp

Make a thick paste of tamarind paste.
Now add some water to the paste to it and boil with jaggery, chilli powder and cumin powder on the stove top
Once it reaches thick consistency, remove it from flame and keep it aside

Final touch:
Dice the boiled potato to small cubes.
Mix them with boiled channa.
Add required amount of green and sweet chutney to it. Mix well
Now add the 1/2 amount of the fried papdi's to it and set it aside for 15 min.

When serving, add 2 tsp of finely blended curd on top of it, sprinkle some chat masala,pepper powder, with few fried padi's.

Kadalai Mittai / Peanut Jaggery balls

Ingredients:
Fried groundnut - 2 cups

Powdered jaggery - 1 cup
Method :
~Heat 3/4 cup of water in a kadai, once the water boils.
~Add the powdered jaggery to it.
~Make a thick consistency of the jaggery.
~Try pouring a pinch of boiling jaggery mixture in water, it should be form a small ball shape.

~This is the correct consistency of jaggery mixture.
~Keep the flame in lower medim, add the fried groundnut to jaggery and mix well and switch of the gas.
~Once it cools down slightly, make balls out of the mixture

~Store in air tight container, you can use it for a month's time

Serves a real good protein rich snack.

Plantain flower Vada/Vazhalaipoo Vada

Ingredients:

vazhaipoo/plantain flower - 1cup
Thoor dal – 2tsp
moong dal - 2tsp
Gram dal – 1cup
Urad dal – 1/4cup
kadalai – 1/4cup
red chilly – reqd
Ginger – 1pc
garlic - 3pods
Onion
Coriander leaves
Salt

Method :

~soak all dal for 1hr.
~then grind Ginger + red chilly + garlic first.
~then add vazhaipoo, dals, salt and grind. (Coarse paste)
~add very little water while grinding.
~then add Onion , Coriander leaves.
~then dumplings of the mixture and deep fry it in hot oul
~vazhaipoo-kadalai vada ready.

Serve hot with chilli sos or pudina chutney

Spinach-Corn pakoda


Nutrient Pakoda i would say, Kids who doesn't eat greens and vegetables will definetly try this pakoda as everything is hidden and morever is it is crispy, the taste that all kids will love.

Ingredients:

moong dal - 1/2 cup
gram dal - 4 tsp
spinach - 1 cup
corn – 1/2 cup
Maida – 1tbsp
onion - 1/2 cup
Salt – reqd
Oil - reqd
Green chilly – 2
Ginger – 1 inch
Garlic – 4 pods

Method:
~soak moong dal, gram dal and grind with corn,green chilly, ginger, garlic.(coarse paste)
~cut spinach and onion and mix with moong dal mixture. [just sprinke water if necessary]
~add salt, now deep fry in oil like pakkoda
~ spinach-Corn Pakkoda is ready. Serve it hot.
Serve with any ketchup or corriander chutney.

Chilli Baaji/Milagai Baaji

Ingredients:
  • chilli/Lengthy Jalapenos - 6

  • Gram flour – 1cup

  • Corn flour – 1tbsp

  • Soombu powder – 1tsp

  • cumin poeder - 1tsp

  • Ginger-Garlic paste – 1tsp

  • Chilly powder – 1tsp

  • Salt – reqd

  • Oil - For Frying
Method:
  • wash and cut chilly into finger size. (can cut into 2pc or use whole chilly)

  • mix all other ingredients together to form a thick batter[Consistency should be of dosa batter]

  • Heat oil in the kadai, set the flame to high medim

  • Now dip each chilli in this flour and deep fry.
Chilli Bajji ready to serve, goes well with chilli ketchup or corriander chutney

Onion Pakoda


I love this dish with rasam sadam. I always get this from one of the road side shop near my home. They prepare it very cripsy, I have mentioned how to get this pakoda cripsy, I believe you will all love this recipe, try it and enjoy.
Ingredients:
  • Besan/ Gram Flour - 1/2 cup

  • Rice flour - 1/4 cup

  • Baking soda -pinch

  • Onion - 2 mediumsize - Thinly sliced length wise

  • Green chillies - 4 - Thinly sliced length wise

  • Ginger - 1/2 inch - Thinly sliced length wise

  • Curry leaves - Chopped fine

  • Corriander leaves - Chopped fine

  • Cashews roasted - optional [just to make it more rich]

  • salt

  • Oil for frying
Preparation:
  • Mix all the above mentioned ingredients except for oil to make a dry mixture

  • When to try to hold a part of it, they should stick to each other

  • If you feel the mixture is very dry, just sprinkle water - 2 drops

  • The mixture should be absoultely dry.

  • Once you are done with the mixing.

  • Heat oil in a big tawa, as you are going to deep fry it, add enough of oil to the tava.

  • Once the oil in hot, add just 2 tsp of oil from the tava and add to the mixture, by doing this your pakoda will be more crisp.

  • Now just break the flour into small pieces and fry till golden brown.
Serve it hot with chilli sos.

Protein rich Vege Cutlet

Ingredients:
  • Potatoes - 2 [Boiled].

  • Mixed vegetables - 1/4 cup [ Beans,carrot,peas,corn] finely chopped.

  • Sprouted beans - 1/4 cup.

  • Chillipowder - 1 tsp.

  • Corriander powder - 11/2 tsp.

  • Tumeric powder - 1/2 tsp.
  • .
  • Cumin seeds - 1 tsp

  • Corriander leaves - chopped
  • Oil to fry

  • Salt - required

  • Cornflour - 2 tsp

  • Bread crumbs - 1/2 cup
Method of preparation:

  • Grate the boiled potatoes, mix well to a fine paste.
  • Mix vegetables and sprouted beans together blend in a mixe for a sec.
  • Remove it from the blender, squeeze the mixture without water.
  • Now heat 2 tsp of oil in the pan, once the oil is hot add the cumin seeds.
  • Add all the chilli,tumeric and corriander powders mix well till raw smell goes off.
  • Don't add water at all, it has to be dry, keep it in low flame and cook.
  • Now add the squeezed vegetable and sprouts mixture in the pan.
  • Add salt.
  • Saute it for 5 min.
  • Add corriander leaves mix well.
  • Once all the mixture is cooked well.
  • Mix it with boiled pototoes.
  • Make medium vadas like balls.



  • Heat oil for deep frying the cutlet.
  • Make a thin batter with cornflour and water.
  • Dip the vadas in cornflour and immediately coated it with bread crumbs.
  • Deep fry in hot oil.
  • Serve hot with Ketchup or any chutney

Medhu Vada



Ingredients:



  • Urdal Dal - 1 cup [Soak over night].



  • Pepper corns - 1 tsp.[grounded coarsely]



  • Cumin seeds/Jeera - 1 tsp.



  • Green chillies - 3 [ Chopped finely].



  • Corriander leaves - Chopped finely.



  • Curry leaves - Chopped finely.



  • Salt - Required.

Preparation Method :


  • Grind the soaked urdal dal in a blender/Mixe - without adding water



  • If required only 1/2 - 1 spoon of water



  • The batter should be of thick consistency and should be grounded to a fine paste




  • Make sure you sure the blender/Mixe properly, don't allow it to become hot, grind it slowly, giving some gaps.



  • Once you are once with the batter, Mix it well with you hand, mix it in circular motion



  • Do this for around 10 - 15 min, this helps the vada to come soft



  • After this is done, take a pinch of batter, drop it in water and check if it floats on the top




  • If it floats, you batter consistency is prefect and now you are ready for making vada




  • Else keep doing the mixing with your hand for another 5 min and check with water and you will see the batter floating in water.



  • Now add salt,ground pepper, cumin seeds,chillies,curry and corriander leaves



  • Mix well all the ingredients.



  • Heat oil in the Kadai, once the oil is hot.



  • Dip you hand in water, take a small ball of water and just roll in your palm



  • Make a hole in the centre with your thumb and drop it in the hot oil



  • You can put 4 vadas together in the oil



  • Don't turn them immediately, wait for some 3 min, now turn



  • Fry till they are golden brown.



  • Serve hot with Chutney or sambhar.

Pav Bhaji




Ingredients:

  • Onion – 1 chopped


  • Tomato – 2 chopped


  • Ginger-garlic paste – 2 tsp


  • Red chilly powder – 1 tsp


  • Tumeric powder – 1/2 tsp


  • Pav bhaji masala – 2tsp [you get it in indian store]


  • Lemon juice – required


  • Salt – reqd


  • Corrianded leaves – reqd


  • Butter – 4 tsp


  • Oil – reqd


  • Pav - reqd


All chopped vegetables

  • Gobi – 1cup


  • Potato – ½ cup


  • Beans – ¼ cup


  • Peas – 1 cup


  • Carrot – ½ cup


  • Capcicum - 1 cup


Preparation Method :

  • Cook all the vegetables in a pressure cooker 2 whistles.


  • Heat oil and 1 tsp of butter in a pan and add chopped onion,ginger garlic paste saute them till they are golden brown


  • Now add the chopped tomato, once they are mushy and cooked


  • Add the powders one by one and butter add 3 tsp of water and cook for around 5 min till all the raw smell leaves


  • Drain the water from the cooked vegetables and add it to the paste and mash it nicely to get a thick paste


  • Cook for about 10 min and the Masala bhaji is ready


  • Now toast the Pav with butter in a tava


  • Now serve Pav and masala bhaji together in a dish with Chopped onion, Piece of lemon and corriander leaves.

Excellent Snack during tea time.

Topping For Garlic Bread


Ingredients:
  • Onion - 2[Medium size, finely chopped]

  • Mushroom - 10 nos[cut it a inch size]

  • Canned Olives - 10 nos Sliced

  • Capsicum - 1 sliced

  • Jalapeno - 2 nos [ Sliced]

  • Shredded cheese - Required amount

  • Crushed Red pepper seasoning - To taste

  • Italian Seasoning - To taste

  • Salt - To taste

  • Oil - For Sauteing
Method of Preparation:

  • Heat oil in a pan

  • Once the oil is hot, add the chopped onion, Once the onions are transparent

  • Add the sliced Mushroom , Sliced Olives Mix well

  • Now add the seasoning

  • Add salt to taste

  • Cook it for about 5 - 10 min

Topping:

1. Take a Garlic Bread
2. Sprinkle some Shredded Cheese
3. Now place 2 tsp of Cooked mixture
4. Now add sprinkle the shredded cheese
5. Place a slice of Jalapeno on every bread
6. Preheat the Oven for 10 min before you start baking
7. Bake it in oven for 5 - 7 min

Excellent Snack or Dinner. Serve hot with Coke or sprite.
