Spicy Cauliflower Gravy

Ingredients:

Nice fresh cauliflower - 1
Tomato - 3
Big onion - 2 finely chopped
Chilli powder - to taste
Corriander powder - 1/2 tsp
Pinch of tumeric powder
Corriander leaves - 1/2 bunch
Curry leaves - 2 strings
Garam masala - 1 tsp
Ginger - 1 inch
Oil - 3 tsp
Salt to taste
Cream - 1/4 cup

Preparation:
  • Clean the cauliflower florets cut them to medium pieces
  • Boil water with 1/2 spoon of salt and add these cauliflower florets to the boiling water, let it boil for 5 min. This wil help us to clean the florets and get rid of worms if any.
  • Now again boil water, when the water starts boiling add 3 tomatoes slightly strach with knife, before adding them to the water.
  • Let it boil for 8 min, drain the water, let the tomatoes cool down.
  • In the meantime, chop the corriander leaves, curry leaves, clean the ginger, blend all of them in the mixer to a fine paste and keep it aside.
  • Once the tomato cools down, blend them to a fine paste, this is called as "Fresh Tomato Puree"
  • Keep 3 tsp of oil in the kadai, add the chopped onion, fry them till brown.
  • Now add the corriander paste, cook for 2 min, till the oil separates
  • Now add the blended tomato, with 1/4 glass of water, let it come to a boil.
  • Now simer the flame, add all the masala powder[chilli,corriander,turmeric and garam masala]
  • Cook for 2 min, till the oil separates.
  • Finally add the cauliflower florets, add 1/2 cup of water, add required amount of salt.
  • Close and cook for 10 min.
  • Finally add the fresh cream, you can substitute with yogurt if no cream is available.
  • Garnish with fresh corriander leaves.

Serve hot with pooris or chappti. Excellent sidedish, i tried and tasted.

Papdi Chat

For Papdi:

All purpose flour/Maida - 1/2 cup
Rava/semolina flour - 3 tsp
Salt - to taste
Water - required

Make a soft dough out the above mentioned ingredients, just finally add 1 tsp of oil at the last to kneed everything together. Close the kneeded doughed and keep it aside for 1/2 an hour.

After 1/2 an hour, make rotis of it, pierce the roti all over and diagonally cut them into pieces.

Then fry these pieces in medium flame and keep it aside.

For chat:

  • Potato - 1 boiled

  • White channa - 1/2 cup boiled with salt.

Green chutney

  • Mint leaves - 1/2 bunch

  • Corriander leaves - 1/2 bunch

  • Green chillies - 2

Roast and grind following ingredients:

  • Cumin seeds - 1/2 tsp

  • Corriander seeds - 1 tsp

  • Tamarind - 1/4 tsp

Roast the above ingredients and keep it aside.

Mix these roasted ingredients with corriander leaves, mint leaves and green chilles and ground it to a fine paste.
Sweet chutney:

  • Tamarind paste - 3 tsp

  • Jaggery - 1/2 tsp

  • Chilli powder - 1/4 tsp

  • Cumin powder - 1/4 tsp

Make a thick paste of tamarind paste.
Now add some water to the paste to it and boil with jaggery, chilli powder and cumin powder on the stove top
Once it reaches thick consistency, remove it from flame and keep it aside

Final touch:
Dice the boiled potato to small cubes.
Mix them with boiled channa.
Add required amount of green and sweet chutney to it. Mix well
Now add the 1/2 amount of the fried papdi's to it and set it aside for 15 min.

When serving, add 2 tsp of finely blended curd on top of it, sprinkle some chat masala,pepper powder, with few fried padi's.

Sree Rama Navami 2009


"Sree Ram Jaya Rama Jaya Jaya Rama"
Rama Navami is celebrated today April 3rd 2009. Celebrations begin with a prayer to the Sun early in the morning. At midday, when Lord Rama is supposed to have been born, a special prayer is performed.


Just chanting the name of Lord Rama will bring joy and prosperity in your life. Seventh avatar of Lord vishnu is “Ram Avatar”. This avatar was taken my lord vishnu to show the human being, how an ideal husband, king, Brother over all a human should be.

So follow the foot Prints of Rama prosper in your life. Lead your life as a Ideal human being.
The syllable 'ra' comes from the eight-lettered mantra of Narayana and the syllable 'ma' comes from the five lettered mantra of Siva.

Thus the word Rama combines in itself the life-giving letters of the two most important mantras of the Hindu religion.

Rama Navami at my place:

Morning prayers by chanting "Sri Rama Jayam" 101 times in front of lord rama.

Mid afternoon offered Milk and sweet for the lord and Performed Deep arthana.

Evening prayers with deep arthana chanting Sri rama 101 times

For Prashadh i prepared karkandu/sweet candy pongal

Ingredients:

Raw rice/Pachai arisi - 1 cup
Moong dal - 5 tsp [Optional]
Ghee - 5 tsp
Dry fruits/nuts mixed - 5 tsp
Milk - 1 cup
Cardamom - 4 powdered
sweet candy/Karkandu - 1 cup [powdered]

Method:

~Dry roast moong dal just for 2 min and keep it aside.

~Wash the rice and keep it aside.

~now boil water thick bottom vessel then add rice and dal.

~Rice and moong dal should be very well cooked, should reach semi solid consistency.

~now add the powdered sweet candy and 2tsp ghee mix well, keep the flame in sim.
~then add cardamom and mix well.

~In a separate pan, heat the ghee - add the all the dry fruits and nuts once they turn golden brown add to the rice mixture.

~sweet candy pongal ready.

Offer it to the almighty with full heart and thank him for all support he is providing us through out our life.

Kadalai Mittai / Peanut Jaggery balls

Ingredients:
Fried groundnut - 2 cups

Powdered jaggery - 1 cup
Method :
~Heat 3/4 cup of water in a kadai, once the water boils.
~Add the powdered jaggery to it.
~Make a thick consistency of the jaggery.
~Try pouring a pinch of boiling jaggery mixture in water, it should be form a small ball shape.

~This is the correct consistency of jaggery mixture.
~Keep the flame in lower medim, add the fried groundnut to jaggery and mix well and switch of the gas.
~Once it cools down slightly, make balls out of the mixture

~Store in air tight container, you can use it for a month's time

Serves a real good protein rich snack.
